- 18-24 months shelf life, but only with continuous cold storage maintained throughout

If landed cost per usable kilogram is the deciding factor, dehydrated wins on freight math alone — no reefer premium, no cold-chain handling fees, and a shelf life that doesn't depend on an unbroken cold chain. Frozen still has its place where the finished dish demands the format, but that choice needs to be made with eyes open to the reefer surcharge riding along with it.
Neither format is universally cheaper — the right call depends on end-use, order volume, and how far the product has to travel.
