Format, moisture, and mesh size behave differently in garlic than in onion, and the wrong assumption here shows up later as clumping, scorching, or a rejected container.
Where India's dehydrated garlic comes from
India is among the largest exporters of dehydrated garlic globally, and production sits inside the same Gujarat processing cluster that handles dehydrated onion. That overlap is practical, not coincidental: the same drying infrastructure, the same cold-chain-adjacent logistics into Mundra and Nhava Sheva, and often the same processing groups running both product lines on parallel shifts. That threshold isn't cosmetic — it's the line between a shelf-stable product and one that clumps, molds, or loses potency in transit through humid ports and warehouses. Any spec sheet should lock this number down in writing, not leave it to assumption.
Beyond moisture, a complete spec sheet for dehydrated garlic should cover: mesh size or particle size range (with tolerance), format (powder, flakes, granules, or minced), color and allicin/pungency expectations, microbial limits, packaging type and net weight per unit, and country-of-origin labeling requirements for the destination market. Ambiguity on any one of these is where disputes start.
