"Chili powder" is not a single spec. India exports several distinct chili varieties, and buyers who order by name alone often get a product that misses either the heat target or the color target on the finished label. Guntur, Kashmiri, and Byadgi are the three names that come up most in sourcing conversations, and each pulls in a different direction — pungency, color, or a blend of both.
