Gujarat dominates India's dehydrated vegetable export trade — Mahuva alone accounts for the majority of the country's dehydrated onion output, thanks to lower starting moisture content in locally grown onion varieties. Combined, India produces roughly 80,000 tonnes of dehydrated onion powder and 40,000 tonnes of garlic powder a year, with around 90% exported.
